Step-by-Step Instructions
- Preheat your oven to 350°F (175°C) and prepare two mini muffin pans by spraying them with non-stick spray.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, ground cinnamon, and optional nutmeg.
- Cut cold butter into the flour mixture until it resembles coarse crumbs.
- In a separate bowl, whisk together the egg, vanilla extract, and yogurt until smooth, then pour into the dry ingredients.
- Fold in the chopped and shredded apples using a spatula.
- Spoon generous amounts of batter into the prepared muffin cups, filling them about three-quarters full.
- Bake for approximately 15 minutes or until the tops are golden brown and a toothpick comes out clean.
- While the fritters are baking, whisk together the powdered sugar and apple cider until smooth.
- Brush the warm fritters with the glaze once they come out, then broil for 2-4 minutes.
- After broiling, let the fritters cool slightly before applying a thicker layer of glaze.
