- Preheat your oven to 400°F (200°C).
- Carefully cut the spaghetti squash in half lengthwise, scoop out the seeds, brush with olive oil, then sprinkle with salt and pepper. Roast cut-side down for 25–30 minutes until tender.
- In a large bowl, combine ground turkey or beef with minced garlic, beaten egg, parmesan cheese, herbs, breadcrumbs, and salt & pepper. Mix gently and form into meatballs.
- In a skillet over medium heat, heat olive oil and brown the meatballs in batches for 5–7 minutes until cooked through.
- In a baking dish, layer marinara sauce, scrape spaghetti squash strands into the dish, top with meatballs, add more sauce, and sprinkle with mozzarella cheese.
- Bake in the preheated oven for 20 minutes until the cheese is bubbly and golden.
