  1. Begin by finely chopping roughly two ripe Roma tomatoes and a small red onion. In a mixing bowl, combine the chopped tomatoes, onion, and 1-2 cloves of minced garlic, then drizzle in a tablespoon of olive oil. Stir gently and let sit for about 5 minutes.
  2. Season the tomato mixture generously with salt and pepper to taste. Stir to ensure the seasoning is evenly distributed.
  3. Slice two ripe avocados in half lengthwise. Remove the pit and scoop out a bit of the flesh to create a cavity.
