Cooking Steps
- Preheat your oven to 400°F (200°C).
- Carefully slice the bell peppers in half lengthwise, removing the seeds and white pith.
- In a large skillet, heat olive oil over medium heat and sauté minced shallots for 3-4 minutes until translucent. Add minced garlic and chopped broccoli, cooking until bright green (2-3 minutes).
- Add shredded rotisserie chicken, cooked rice, and seasonings to the skillet. Mix thoroughly for 2-3 minutes.
- Stir in half of the cheddar and mozzarella cheese until combined.
- Fill each pepper half generously with the mixture and top with remaining cheese.
- Cover the baking dish with aluminum foil and bake for approximately 30 minutes.
- After 30 minutes, carefully remove foil and bake for an additional 15 minutes, until cheese is bubbly and golden.
- Let cool slightly before serving. Enjoy with a fresh side salad or warm soup.
