Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C).
  2. Carefully slice the bell peppers in half lengthwise, removing the seeds and white pith.
  3. In a large skillet, heat olive oil over medium heat and sauté minced shallots for 3-4 minutes until translucent. Add minced garlic and chopped broccoli, cooking until bright green (2-3 minutes).
  4. Add shredded rotisserie chicken, cooked rice, and seasonings to the skillet. Mix thoroughly for 2-3 minutes.
  5. Stir in half of the cheddar and mozzarella cheese until combined.
  6. Fill each pepper half generously with the mixture and top with remaining cheese.
  7. Cover the baking dish with aluminum foil and bake for approximately 30 minutes.
  8. After 30 minutes, carefully remove foil and bake for an additional 15 minutes, until cheese is bubbly and golden.
  9. Let cool slightly before serving. Enjoy with a fresh side salad or warm soup.
