For the Cheesy Topping
  • 1 cup Cheddar Cheese Shredded.
  • 1 cup Mozzarella Cheese Shredded; can substitute with Monterey Jack or Gouda.
Seasonings
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Italian Herbs

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a baking dish.
  2. Halve the bell peppers lengthwise, remove seeds, and arrange cut-side-up in the baking dish.
  3. Sauté shallots in a large skillet over medium heat until translucent, then add garlic and broccoli, and cook until bright green.
  4. Mix shredded chicken, cooked rice, and seasonings into the skillet; add broth if mixture seems dry.
  5. Incorporate half of the cheese into the chicken mixture.
  6. Stuff each pepper half with the chicken mixture and top with remaining cheese.
  7. Cover the baking dish with foil and bake for 30 minutes.
  8. Remove foil and bake uncovered for an additional 15 minutes until cheese is bubbly and golden brown.
