  • 1 teaspoon Chili Powder adjust to taste
  • 1 teaspoon Paprika smoked paprika for added flavor
  • 2 cups Shredded Cheddar Cheese Monterey Jack or vegan cheese can be used

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare your casserole dish.
  2. In your casserole dish, combine the uncooked rice, minced garlic, chopped onion, and chicken broth. Stir well.
  3. Layer the cubed chicken over the rice, followed by the black beans, corn, and salsa. Sprinkle chili powder and paprika on top.
  4. Sprinkle shredded cheddar cheese over the top.
  5. Cover with aluminum foil and bake for 45 minutes.
  6. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden brown.
  7. Check the rice for doneness, ensuring it is fully cooked and chicken reaches internal temp of 165°F.
