Step-by-Step Instructions for Cowboy Soup
  1. Heat the olive oil in a large Dutch oven over medium-high heat until shimmering.
  2. Sauté the diced onions and chopped celery for 2-3 minutes until softened, then add minced garlic and cook for an additional 30 seconds.
  3. Brown the ground beef in the pot, breaking it apart and cooking for 5-6 minutes until no longer pink.
  4. Stir in diced potatoes and chopped carrots, then add beef broth and diced tomatoes. Bring to a vigorous boil.
  5. Reduce heat to medium-low and simmer for 20 minutes, stirring occasionally.
