Step-by-Step Instructions
  1. In a large pot, melt 2 tablespoons of butter over medium heat until bubbly. Add 1 diced onion, 2 chopped carrots, and 2 stalks of diced celery. Sauté for about 10 minutes until softened and translucent.
  2. Stir in 2 minced garlic cloves and cook for 1 minute. Then sprinkle in 1 teaspoon of smoked paprika and 2 tablespoons of flour, stirring constantly.
  3. Pour in 4 cups of vegetable broth and add 4 cups of chopped broccoli. Bring to a gentle simmer and cook for 8-9 minutes until broccoli is tender.
  4. Reduce heat to low and stir in 1 cup of milk and 1 cup of blended cottage cheese. Blend a cup of soup until smooth and return it to the pot.
  5. Season with salt and pepper to taste, warm through, and serve hot garnished with extra cheese or herbs as desired.
