For Coating and Frying
  • 1 cup Dark Brown Sugar Light brown sugar is an alternative.
  • 2 tablespoons Cornstarch Acts as a binding agent.
  • 1 cup Cool Water Plain tap water works.
  • 2 cups Vegetable Oil For frying.
  • ½ cup Granulated Sugar For caramel coating.

Method
 

Step‑by‑Step Instructions for Crispy Turon
  1. Prepare the Bananas: Peel the Saba bananas and cut them into quarters lengthwise.
  2. Drain the Jackfruit: Open and drain the jackfruit, then slice it into thin strips.
  3. Coat with Brown Sugar: Roll the banana pieces in brown sugar until fully covered.
  4. Make the Cornstarch Mixture: Mix cornstarch with a splash of cool water until smooth.
  5. Assemble the Rolls: Place a coated banana piece in the wrapper, fold and roll tightly, sealing with cornstarch mixture.
  6. Heat the Oil: Heat vegetable oil in a deep pot to 350°F (175°C) for frying.
  7. Fry the Turon: Fry the rolls for about 2 minutes on each side until golden brown.
  8. Cool the Rolls: Transfer fried Turon to a wire rack to cool for at least 20 minutes.
  9. Prepare the Caramel Coating: Melt granulated sugar in a saucepan until it turns amber.
  10. Dip and Set: Dip each fried Turon into the hot caramel and let set on a parchment-lined tray.
