Method
 

Baking Instructions
  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Cream together softened salted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  3. Add eggs one at a time, mixing well, and then add vanilla extract until smooth and creamy.
  4. In a separate bowl, combine all-purpose flour, crushed graham crackers, baking soda, baking powder, and salt, whisking until mixed.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently until the dough comes together.
  6. Portion the dough into balls about the size of a tablespoon and place them on the prepared baking sheet, flattening each slightly.
  7. Bake for 12-15 minutes or until edges are golden brown but centers remain soft.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  9. Beat the cream cheese until smooth, gradually adding powdered sugar and folding in marshmallow creme if using.
  10. Frost cooled cookies generously with cream cheese frosting, drizzle with caramel sauce, and sprinkle with coarse sea salt.
