Step-by-Step Instructions
  1. In a large sauté pan over medium-high heat, add the ground beef and cook until browned, about 6-8 minutes, breaking it up with a spatula as it cooks.
  2. Stir in the taco seasoning, along with a splash of water, and let it simmer for about 4 minutes.
  3. Add the chopped onions, Rotel, and corn to the seasoned beef mixture and mix well, allowing the ingredients to come together for another 2-3 minutes on low heat.
  4. In a mixing bowl, combine the Bisquick with water to create a sticky dough. Spread this dough evenly in a greased 9x13-inch baking dish.
  5. Carefully spoon the beef mixture over the biscuit base, then dollop the cream cheese mixture on top and sprinkle with cheese blend.
  6. Preheat your oven to 325°F (160°C) and place the assembled casserole inside. Bake for about 40 minutes.
  7. Once baked, remove the casserole from the oven and allow it to rest for about 10 minutes before serving.
