Preparation Steps
- Preheat the oven to 400°F (200°C).
- Chop the cauliflower into florets and peel the garlic cloves. Place on a baking sheet and drizzle with olive oil.
- Roast in the oven for about 25 minutes, stirring halfway through, until fork-tender.
- Transfer the roasted cauliflower and garlic to a food processor.
- Add Parmesan cheese, butter, and milk/cream. Season with salt and pepper. Blend until smooth.
- Taste and adjust the seasoning if necessary. Blend again for a few seconds if adjustments are made.
- Serve warm, drizzled with olive oil or sprinkled with chives if desired.
