Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 13×9-inch baking pan by greasing it or lining it with parchment paper.
  2. In a large mixing bowl, cream together unsalted butter, 1 cup of creamy peanut butter, granulated sugar, and light brown sugar for about 3 minutes until fluffy.
  3. Add the eggs one at a time, beating well after each addition, then mix in 1 teaspoon of vanilla extract.
  4. Whisk together the all-purpose flour, baking soda, and salt in a separate bowl. Gradually add this to the wet ingredients while mixing on low speed.
  5. Fold in 2 cups of quick-cooking oats gently into the batter until evenly mixed.
  6. Pour the mixture into the prepared baking pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 20–25 minutes until the edges are golden and a toothpick inserted comes out clean.
  8. Melt 1 cup of semisweet chocolate chips with the remaining ½ cup of creamy peanut butter in a microwave-safe bowl.
  9. Once the bars are baked and slightly cooled, pour the melted chocolate-peanut butter mixture over the top and spread evenly.
  10. Allow the bars to cool completely on a wire rack before cutting into 16 squares.
