Step-by-Step Instructions for Southwest Chicken Egg Roll
- In a large mixing bowl, combine cooked chicken, corn, black beans, spinach, red bell pepper, and jalapeños. Add cumin, chili powder, salt, and black pepper to taste. Mix everything well until evenly combined.
- Lay an egg roll wrapper on a flat surface with one corner facing you. Spoon 2-3 tablespoons of filling into the center, fold the bottom corner over the filling, then fold in the sides and roll tightly, sealing the edges with water.
- Choose your cooking method: for frying, heat oil in a skillet to 350°F; for baking, preheat oven to 425°F.
- For frying, gently place the egg rolls in hot oil and fry for 5-6 minutes until golden brown. For baking, arrange on a baking sheet, spray with cooking oil, and bake for 15-20 minutes, turning halfway.
- Remove from oil or oven and place on paper towels to absorb excess oil. Allow to cool for a few minutes before serving.

Notes
Keep egg roll wrappers covered with a damp cloth while working. Adjust filling ingredients as necessary based on preference. For optimal crispiness, allow fried rolls to cool on a wire rack.
