  1. In a large mixing bowl, combine cooked chicken, corn, black beans, spinach, red bell pepper, and jalapeños. Add cumin, chili powder, salt, and black pepper to taste. Mix everything well until evenly combined.
  2. Lay an egg roll wrapper on a flat surface with one corner facing you. Spoon 2-3 tablespoons of filling into the center, fold the bottom corner over the filling, then fold in the sides and roll tightly, sealing the edges with water.
  3. Choose your cooking method: for frying, heat oil in a skillet to 350°F; for baking, preheat oven to 425°F.
