  • ¼ cup Water helps to combine the sauce ingredients

Step-by-Step Instructions for Zucchini Stir Fry
  1. In a medium bowl, combine bite-sized pieces of chicken with soy sauce, apple cider vinegar, and sugar. Mix well and marinate for about 10 minutes.
  2. In another bowl, whisk together the remaining soy sauce, a splash of apple cider vinegar, sugar, minced garlic, freshly grated ginger, water, cornstarch, and red pepper flakes until smooth.
  3. Heat olive oil in a large wok or skillet over medium-high heat. Add the marinated chicken to the pan and sear for about 5-7 minutes until golden brown and fully cooked, then remove it from the pan.
  4. In the same pan, add sliced onions and sauté for 2-3 minutes until caramelized. Then add chopped zucchini, stirring for another 3-4 minutes until tender but crisp.
  5. Return the cooked chicken to the pan with zucchini and onions. Pour in the prepared sauce and stir-fry for an additional 2-3 minutes until thickened and heated through. Serve warm.
