Method
 

Step‑by‑Step Instructions
  1. Rinse and drain chickpeas under cold water for 30 seconds. Shake off excess water.
  2. Dice cucumber, halve cherry tomatoes, slice red onion, and chop bell pepper. Set aside.
  3. Crumble feta cheese into small pieces.
  4. In a small bowl, whisk together lemon juice, olive oil, minced garlic, oregano, salt, and pepper.
  5. In a large bowl, combine chickpeas, chopped vegetables, and crumbled feta. Pour dressing over and toss gently.
