- Start by peeling and dicing about four ripe peaches, mixing with some sugar and letting sit for an hour.
- Pulse together flour, sugar, and salt in a food processor. Cut in cold butter and shortening, then add ice water until dough forms.
- Drain excess juice from peaches and whisk reserved juice with cornstarch, cinnamon, and salt in a saucepan over medium heat for 5 minutes.
