Step-by-Step Instructions for Zucchini Stir Fry
  1. In a medium bowl, combine chicken pieces with soy sauce, apple cider vinegar, and a touch of sugar. Allow to marinate for 10 minutes.
  2. In a separate bowl, whisk together soy sauce, apple cider vinegar, sugar, ginger, garlic, water, cornstarch, and red pepper flakes to create the sauce.
  3. Heat olive oil in a wok or skillet over medium-high heat. Add marinated chicken and sauté for 5-7 minutes until cooked through.
  4. In the same pan, add sliced onions and zucchini, sauté for 4-5 minutes until zucchini is tender but crisp.
  5. Return the chicken to the pan, stir to coat everything in sauce, and heat through for an additional 2-3 minutes before serving.
