- In a medium saucepan, combine water, butter or coconut oil, maple syrup, vanilla extract, and salt. Bring to a simmer over medium heat.
- Once it simmers, remove from heat and stir in white whole wheat flour until a thick dough forms.
- Allow the dough to cool for 2-3 minutes, then add the egg. Beat until smooth and glossy.
- Transfer the dough into a piping bag or zip-top bag. Pipe out approximately 1.5-inch segments onto a parchment-lined baking sheet.
- Preheat air fryer to 375°F (190°C) for about 5 minutes, lightly spraying the basket with cooking spray.
- Place churro bites in the air fryer basket, making sure they are spaced out, and air fry for 7-9 minutes, flipping halfway through.
- Once cooked, brush with melted coconut oil and toss in a mixture of coconut sugar and cinnamon until well-coated.
- Serve warm with a dip of your choice, such as chocolate ganache or honey yogurt.
