- Preheat your oven to 180°C (350°F) and prepare your baking pan by lining it with parchment paper.
- Peel and chop the fresh apples into small, even pieces.
- In a blender, combine three-quarters of the oats with the chopped apples, honey, yogurt, eggs, cinnamon, vanilla extract, baking soda, baking powder, and melted butter or coconut oil. Blend until smooth.
- Transfer the blended mixture into a mixing bowl and gently fold in the remaining oats by hand.
- Pour the batter into your prepared baking pan and bake for 20-30 minutes until a toothpick comes out clean.
- Cool the cake in the pan for about 10 minutes before transferring it to a wire rack.
- Once cooled, slice the cake into squares or wedges and serve warm or chilled.
