Step-by-Step Instructions
  1. Prepare the Dough: Create a mound with flour, make a well, add eggs, salt, and olive oil. Gradually mix in flour, knead for 8-10 minutes until smooth.
  2. Rest the Dough: Wrap dough in plastic wrap, let rest at room temperature for at least 30 minutes.
  3. Roll Out the Dough: Divide dough into four pieces, roll one piece into a thin sheet, use a pasta machine if available.
  4. Cut the Pasta: Slice rolled dough into preferred shapes, dust cut pasta with flour, let dry.
  5. Cook the Pasta: Boil salted water, add fresh pasta and cook for 2-4 minutes until floating and al dente.
  6. Create the Sauce: In a skillet, heat olive oil, add minced garlic, then add cream and simmer until thickened.
  7. Combine Pasta and Sauce: Add drained pasta to sauce, toss to coat, garnish with Parmesan and herbs.
