Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Pat your chicken breasts dry with paper towels. Arrange the chicken in a single layer in a baking dish.
  3. In a medium bowl, whisk together balsamic vinegar, honey, olive oil, Dijon mustard, dried basil, salt, black pepper, and minced garlic.
  4. Pour the balsamic marinade over the chicken breasts and ensure each piece is coated. Marinate for at least 30 minutes.
  5. Scatter halved cherry tomatoes around the chicken in the baking dish.
  6. Bake for 20 to 25 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Let the dish rest for a few minutes before serving and garnish with freshly chopped parsley.
