Preparation Steps
  1. In a mixing bowl, whisk together the peanut butter, honey, rice vinegar, soy sauce, sesame oil, minced garlic, ginger, and a pinch of salt until smooth and creamy.
  2. Combine the coleslaw mix, shredded carrots, and chopped cilantro in a large bowl. Pour the peanut sauce over the veggies and mix well.
  3. Microwave tortillas on a damp paper towel for 10-15 seconds to soften.
  4. Lay each tortilla flat, add sliced chicken, and top with veggie filling. Roll tightly.
  5. Cut wraps in half, garnish with peanuts and cilantro, serve immediately.
