Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering, about 2 minutes.
  2. Add sliced andouille sausage, cooking for 5-6 minutes until browned evenly on all sides. Remove sausage and set aside.
  3. Increase heat to medium-high, add another tablespoon of olive oil, and sauté chopped bell peppers and diced onion for 4-5 minutes.
  4. Stir in minced garlic and cook for another minute, being careful not to burn the garlic.
  5. Return the sausage to the skillet, stirring everything together and heat for about 1 minute.
  6. Sprinkle red pepper flakes if using, stir to incorporate.
  7. Garnish with chopped green onions and fresh parsley or basil before serving warm.
