For Serving
  • 8 pieces Tortillas Flour or corn, as per preference.

Step‑by‑Step Instructions
  1. Layer half of the sliced bell peppers and onions at the bottom of the slow cooker.
  2. Place the chicken breasts on top of the veggies and sprinkle half of the fajita seasoning over them.
  3. Add diced tomatoes and green chiles, then layer the remaining sliced peppers and onions.
  4. Sprinkle the rest of the fajita seasoning and drizzle fresh lime juice over the mixture.
  5. Cover and cook on HIGH for 3-4 hours or LOW for 6-8 hours.
  6. Shred the chicken after cooking and return it to the slow cooker, mixing well with the veggies.
  7. Serve on warm tortillas and add favorite toppings like sour cream and guacamole.
