Step-by-Step Instructions
  1. Begin by slicing the bell peppers and onions into thin strips. Layer half of these colorful vegetables at the bottom of your slow cooker.
  2. Place the chicken breasts on top of the vegetable layer, ensuring they sit evenly. Sprinkle half of the fajita seasoning over the chicken.
  3. Pour the diced tomatoes and green chiles over the chicken to add moisture and tanginess.
  4. Top off with the remaining bell peppers and onions. Spread evenly for uniform cooking.
  5. Sprinkle the rest of the fajita seasoning over the mixture, then drizzle fresh lime juice on top.
  6. Cover the slow cooker and set to HIGH for 3-4 hours or LOW for 6-8 hours until the chicken is tender.
  7. Remove the chicken from the slow cooker and shred it using two forks. Return it to the cooker to mix with the peppers and juices.
