Step-by-Step Instructions for Turkey Enchilada Skillet
  1. In a large skillet, heat 2 tablespoons of avocado oil over medium heat until it shimmers.
  2. Add 1 pound of ground turkey to the skillet, season with cumin, salt, and pepper; cook for 5–7 minutes until browned.
  3. Remove the turkey and in the same skillet, sauté chopped onions and red bell pepper for about 3 minutes until softened.
  4. Stir in 1 can of black beans, diced green chiles, enchilada sauce, and 1 cup of frozen corn; simmer for 2-3 minutes.
  5. Add the cooked turkey back into the skillet; cut 4-6 corn tortillas into strips and fold them into the mixture; simmer for about 3 minutes.
  6. Sprinkle shredded cheese over the mixture, cover, and cook for an additional 5 minutes until the cheese is melted and bubbling.
  7. Serve warm, topped with fresh cilantro, avocado slices, and sour cream.
