  • 1 tablespoon Cornstarch Substitutes: arrowroot powder or flour
  • ¼ teaspoon Red Pepper Flakes Adjust to taste or omit
For Sautéing
  • 2 tablespoons Olive Oil Can substitute with canola or sesame oil
For the Veggies
  • 2 cups Zucchini, sliced Can substitute with bell peppers or snap peas
  • ¼ cup Green Onions, chopped Optional garnish
  • 1 tablespoon Sesame Seeds Optional garnish

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine chicken pieces with soy sauce, apple cider vinegar, and sugar. Let marinate for about 10 minutes.
  2. Whisk together the remaining soy sauce, apple cider vinegar, sugar, ginger, garlic, water, cornstarch, and red pepper flakes in a small bowl.
  3. Heat olive oil in a wok over medium-high heat. Add marinated chicken, sauté for 5-7 minutes until golden brown and cooked through.
  4. Add remaining oil and toss in green onions. Sauté for 2 minutes, then add zucchini and stir-fry for 3-4 minutes.
  5. Return chicken to the skillet and pour in stir fry sauce. Toss over medium heat for 2-3 minutes until well mixed.
