Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add thinly sliced andouille sausage and cook for 5 to 6 minutes until golden-brown. Remove and set aside.
  2. Add another tablespoon of olive oil to the skillet. Once hot, add sliced red and yellow bell peppers and diced yellow onion. Season with Italian seasoning, salt, and pepper. Cook for 4 to 5 minutes until tender.
  3. Stir in minced garlic and cook for an additional minute, stirring continuously to prevent burning.
  4. Return the sausage to the skillet and stir well. Heat through for about a minute.
  5. Taste and adjust seasoning, adding red pepper flakes for heat if desired. Let flavors meld together for an extra minute before serving.
  6. Garnish with freshly sliced green onions and chopped parsley or basil before serving.
