- Heat the vegetable oil in a large pot over medium heat. Add the diced chicken thighs and brown for 3-4 minutes, then add the sliced Andouille sausage.
- Add chopped onion, diced green bell pepper, and chopped celery to the pot. Sauté for 6-7 minutes until softened.
- Stir in minced garlic and cook for about 1 minute until fragrant.
- Sprinkle in Cajun seasoning, dried thyme, oregano, and season with salt and pepper. Stir and cook for 30 seconds.
- Add rinsed long-grain rice, chicken broth, diced tomatoes, and bay leaves. Bring to a boil, then reduce heat and simmer covered for 25-30 minutes.
- Check the rice for tenderness after 25 minutes. If needed, simmer longer.
- Remove bay leaves, stir to combine flavors, and garnish with green onions, parsley, and chili flakes before serving.
