  • 2 tablespoons vegetable oil can substitute with olive oil
  • 12 ounces Andouille sausage high-quality sausage recommended
  • 1 pound boneless chicken thighs or chicken breast
  • 1 medium onion yellow onion is typical
  • 1 medium green bell pepper or red bell pepper for sweetness
  • 1 stalk celery can be omitted
  • 4 cloves garlic fresh minced recommended
  • 2 tablespoons Cajun seasoning adjust according to heat preference
  • 1 teaspoon dried thyme optional
  • 1 teaspoon oregano optional
  • salt to taste
  • pepper to taste
  • 1 cup long-grain rice rinse before use
  • 4 cups chicken broth low-sodium preferred
  • 14.5 ounces fire-roasted diced tomatoes include juices
  • 2 leaves bay leaves remove before serving
For Garnish
  • chopped green onions for freshness and color
  • chopped fresh parsley for appearance and flavor
  • red chili flakes to taste

Method
 

Cooking Instructions
  1. Heat the vegetable oil in a large pot over medium heat. Add the diced chicken thighs and brown for 3-4 minutes, then add the sliced Andouille sausage.
  2. Add chopped onion, diced green bell pepper, and chopped celery to the pot. Sauté for 6-7 minutes until softened.
  3. Stir in minced garlic and cook for about 1 minute until fragrant.
  4. Sprinkle in Cajun seasoning, dried thyme, oregano, and season with salt and pepper. Stir and cook for 30 seconds.
  5. Add rinsed long-grain rice, chicken broth, diced tomatoes, and bay leaves. Bring to a boil, then reduce heat and simmer covered for 25-30 minutes.
  6. Check the rice for tenderness after 25 minutes. If needed, simmer longer.
  7. Remove bay leaves, stir to combine flavors, and garnish with green onions, parsley, and chili flakes before serving.
