  • 2 cups shredded provolone cheese or mozzarella
  • ½ cup grated Parmesan cheese or nutritional yeast for vegan option

Step-by-Step Instructions for Spicy Lasagna Soup
  1. In a large Dutch oven, heat olive oil over medium-high heat. Sauté onion, celery, and red bell peppers for about 5 minutes until soft.
  2. Add minced garlic and cook for about 1 minute until fragrant.
  3. Stir in ground beef and spicy Italian sausage, breaking it up. Season with salt and pepper. Cook until browned, about 10 minutes.
  4. Incorporate tomato paste, basil, oregano, and thyme. Cook for 5 minutes.
  5. Deglaze with white wine, simmer for 2 minutes. Add crushed tomatoes and chicken broth; bring to a simmer and cook for 10-20 minutes.
  6. Stir in coconut milk and warm for another 10 minutes.
  7. Cook lasagna noodles according to package instructions. Drain and add to soup.
  8. Stir in provolone and Parmesan cheese until melted and well incorporated.
