Preparation Steps
  1. In a medium bowl, whisk together 1 cup flour, 1 cup rolled oats, 1 cup brown sugar, and 1 teaspoon cinnamon. Pour in ½ cup melted butter, mixing until crumbly. Cover and chill for about 30 minutes.
  2. Peel and slice 4 large Granny Smith apples, toss with ½ cup brown sugar and 1 teaspoon cinnamon, and chill for at least 15 minutes.
  3. Preheat oven to 350°F. Combine 1.5 cups graham cracker crumbs, 0.25 cups sugar, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, and ½ cup melted butter. Press into a springform pan and bake for 10 minutes.
  4. Lower oven temperature to 325°F. Beat 16 ounces cream cheese and ¾ cup white sugar until smooth. Gradually mix in ½ cup sour cream, 1 teaspoon vanilla extract, and 1 teaspoon cinnamon. Add 3 room temperature eggs one at a time.
  5. Pour cheesecake batter into the cooled crust, layer with chilled apple slices, and sprinkle streusel mixture over apples.
  6. Bake in a water bath for 1 hour and 10-15 minutes until edges are set and the center jiggles slightly.
  7. Turn off oven and crack door open to cool slowly for 1 hour. Transfer to the refrigerator and chill uncovered overnight.
