Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (204°C) and line baking sheets with parchment paper.
  2. Roll out pie crust to ⅛-inch thickness and cut into 3.5-inch circles. Chill the circles.
  3. In a large mixing bowl, mix chopped apples, sugar, flour, cinnamon, nutmeg, and vanilla extract until coated.
  4. Place apple filling in the center of half the circles and dot with butter. Leave space around edges.
  5. Brush edges with egg wash, place remaining circles on top, and crimp edges with a fork.
  6. Brush tops with egg wash, optionally sprinkle with coarse sugar, and cut steam slits.
  7. Bake for 18-22 minutes until golden brown and filling is bubbly.
