Method
 

Step-by-Step Instructions
  1. Thaw the frozen cauliflower rice and drain Ro-Tel tomatoes in a fine mesh strainer.
  2. Heat olive oil in a large skillet, sauté onions until soft (3-4 minutes).
  3. Add cauliflower rice to the skillet and cook for 3-4 minutes to dry out.
  4. Add more olive oil, brown ground beef (5-7 minutes), breaking it apart.
  5. Stir in taco seasoning and drained Ro-Tel tomatoes, cook until warm.
  6. Fold in cauliflower rice and season with salt.
  7. Mix in 2 cups of Mexican blend cheese, then transfer to a greased casserole dish and top with remaining cheese.
  8. Preheat oven to 375°F and bake for 30 minutes until cheese is golden.
  9. Let it sit before serving with toppings.
