- Preheat your oven to 350°F (175°C) and spray a muffin tin with cooking spray.
- Whisk together the Parmesan, half-and-half, thyme, garlic powder, salt, pepper, and smoked paprika until smooth.
- Slice the Russet potatoes into thin rounds and coat each slice in the Parmesan mixture.
- Layer two coated potato slices in each muffin tin cup, followed by a piece of ham, repeating for four layers.
- Cover the muffin tin with aluminum foil and bake for 35 minutes.
- Remove the foil and sprinkle cheddar cheese on top; bake uncovered for another 10-15 minutes until melted and bubbly.
- Allow to cool in the muffin tin for 5-10 minutes before serving.
