  • mixing bowls
  • whisk

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch square baking pan by lining it with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk until well-blended.
  3. Add the soft unsalted butter to the dry ingredients and mix until the mixture resembles fine breadcrumbs.
  4. In a separate bowl, whisk together the eggs, sour cream, milk, and vanilla extract until smooth. Pour this into the bowl with the dry ingredients and stir gently.
  5. Chop the fresh apples into small pieces and toss with ground cinnamon and sugar to coat.
  6. Spread two-thirds of the batter in the baking pan, sprinkle the cinnamon-coated apples on top, then dollop the remaining batter over the apples.
  7. Mix together cinnamon and sugar for the topping and sprinkle generously over the batter.
  8. Bake for 25-28 minutes, until a skewer inserted in the center comes out clean.
  9. Let the cake cool in the pan for about 10 minutes. Whisk powdered sugar with milk for the glaze and drizzle over the warm cake.
  10. Allow the cake to set for a few minutes before cutting into squares and serving.

Notes

Ensure the butter is very soft for a rich texture. Use fresh, firm apples to avoid a soggy cake. Stir wet and dry ingredients just until combined to keep the cake light and tender.
