- Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
- Mash 2-3 ripe bananas in a large mixing bowl until smooth.
- Mix in ⅓ cup of vegetable oil and 2 beaten eggs until well combined.
- Whisk together 1 cup of flour, ⅔ cup of sugar, 1 teaspoon of baking soda, and a pinch of salt in a separate bowl, then combine with wet ingredients.
- In a small bowl, mix ¼ cup of brown sugar, 1 tablespoon of cinnamon, and a pinch of nutmeg until crumbly.
- Layer half of the banana batter, half of the cinnamon mixture, remaining banana batter, and top with remaining cinnamon mixture. Swirl gently with a knife.
- Bake for 55-65 minutes until a toothpick comes out clean. Cool for 10 minutes before transferring to a wire rack.
- Allow to cool completely before slicing.
