Cooking Steps
- In a medium saucepan, bring 1.5 cups of water and 1 tablespoon of butter to a rolling boil. Stir in ½ cup of Uncle Ben's Converted White Rice, reduce heat to low, cover, and let simmer for 20 minutes.
- In a large saucepan, combine two cans of red beans (with juices), 1 cup of additional water, onion powder, garlic powder, hot sauce, salt, liquid smoke, and bacon fat. Stir over medium heat and let simmer.
- Gently mash the bean mixture while keeping some whole beans. Stir frequently and let thicken for about 15 minutes.
- Serve by placing rice in a bowl and spooning warm red bean mixture over the top. Garnish with chopped parsley or green onions if desired.
