Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. Combine graham cracker crumbs with brown sugar and melted butter, press into the bottom of the pan and bake for 8-10 minutes.
  3. In a bowl, beat cream cheese with sugar and vanilla, then add the egg and mix until just blended. Pour over cooled crust.
  4. Toss sliced peaches with sugar, cinnamon, nutmeg, lemon juice, and cornstarch, then spread over cheesecake layer.
  5. Combine flour, brown sugar, and cubed butter until crumbly; sprinkle over the peach layer.
  6. Bake for 40-45 minutes until edges are set and topping is golden. Let cool to room temperature, then chill for at least 2 hours.
  7. Lift bars out using parchment, slice into squares, and serve with whipped cream or ice cream if desired.
