- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
- Combine graham cracker crumbs and brown sugar, then stir in melted butter until it resembles wet sand. Press into the bottom of the baking dish and bake for 8-10 minutes.
- Beat softened cream cheese until smooth, then gradually add granulated sugar and vanilla. Mix in the egg until just combined, and pour over the cooled crust.
- Toss sliced peaches with additional sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Layer this mixture over the cheesecake layer.
- Combine flour, additional brown sugar, and cinnamon for the topping. Cut in cubed butter until crumbly, and sprinkle over the peach layer.
- Bake for 40-45 minutes or until edges are set. Cool to room temperature.
- Refrigerate for at least 2 hours to set before lifting out and slicing into squares.
