  • ¾ cup shredded cheddar cheese for the topping
  • 1 cup farmer's cheese can swap with ricotta or cottage cheese
  • 1 cup fresh spinach drained well to avoid excess moisture
  • 8 ounces smoked kielbasa sausage can swap for bacon or plant-based sausage
  • 1 medium onion finely chopped
  • 1 tablespoon olive oil for greasing the baking dish
  • to taste teaspoon kosher salt

Step‑by‑Step Instructions for Pierogi Casserole
  1. Preheat your oven to 375°F (190°C) and grease a 13 x 9-inch baking dish with olive oil.
  2. Arrange 12 pierogi in a single layer at the bottom of the greased baking dish.
  3. In a mixing bowl, combine the cheddar cheese soup with three quarters of the shredded cheddar cheese and pour half over the arranged pierogi.
  4. Add half of the farmer’s cheese, drained spinach, chopped onion, and diced smoked kielbasa, sprinkling with kosher salt.
  5. Repeat the layering with remaining pierogi, cheese soup mixture, farmer’s cheese, spinach, onion, and kielbasa.
  6. Sprinkle remaining shredded cheddar cheese on top and drizzle a little olive oil over it.
  7. Bake in the preheated oven for 45 minutes or until cheese is bubbly and edges are lightly golden.
  8. Remove from the oven, let cool for a few minutes, and garnish with minced scallions before serving.
