- Wash and thinly slice the pears, toss them with lemon juice, granulated sugar, brown sugar, cinnamon, and a pinch of salt.

- Poke holes in the inner rectangle of each pastry piece using a fork.
- Whisk together an egg and a splash of milk, then brush the edges of each rectangle with the mixture.
