Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and thinly slice the pears, toss them with lemon juice, granulated sugar, brown sugar, cinnamon, and a pinch of salt.
  3. Roll out the puff pastry and cut it into 12 rectangles, scoring a ½-inch border around each piece.
  4. Poke holes in the inner rectangle of each pastry piece using a fork.
  5. Whisk together an egg and a splash of milk, then brush the edges of each rectangle with the mixture.
  6. Arrange the seasoned pear slices within the scored border of each puff pastry rectangle.
  7. Bake for 15-20 minutes until golden brown and puffed up.
  8. Brush the baked tarts with warm fig jam, sprinkle with toasted almonds, and optionally dust with powdered sugar before serving.
