Ingredients
  

For the Crust
  • 1 cup graham cracker crumbs can be replaced with digestive biscuits for gluten-free option
  • ½ cup unsalted butter melted
  • 2 tablespoon sugar
For the Cheesecake Filling
  • 16 oz cream cheese softened
  • ¾ cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream or Greek yogurt
  • ½ cup mini chocolate chips
For the Strawberry Sauce
  • 1 cup strawberries fresh or frozen
  • 2 tablespoon sugar
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Method
 

Prepare the Crust
  1. Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, melted unsalted butter, and sugar. Press into a lined 9x9-inch baking pan. Bake for 8-10 minutes until golden, then cool completely.
Make Strawberry Sauce
  1. In a saucepan, combine strawberries and sugar over medium heat. Cook for 5-7 minutes until juicy. Stir in cornstarch slurry and simmer for 2-3 minutes until thickened. Cool.
Make Cheesecake Filling
  1. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time. Stir in vanilla extract and sour cream. Fold in mini chocolate chips.
Assemble Bars
  1. Pour cheesecake filling over the cooled crust. Spoon cooled strawberry sauce on top and swirl gently with a knife.
Bake
  1. Bake for 35-40 minutes until edges are set and center jiggles slightly. Do not overbake.
Chill & Slice
  1. Cool at room temperature for 30 minutes, then refrigerate for at least 3 hours or overnight. Slice into squares.
