Prepare the Crust
- Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, melted unsalted butter, and sugar. Press into a lined 9x9-inch baking pan. Bake for 8-10 minutes until golden, then cool completely.
Make Strawberry Sauce
- In a saucepan, combine strawberries and sugar over medium heat. Cook for 5-7 minutes until juicy. Stir in cornstarch slurry and simmer for 2-3 minutes until thickened. Cool.
Make Cheesecake Filling
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time. Stir in vanilla extract and sour cream. Fold in mini chocolate chips.
Assemble Bars
- Pour cheesecake filling over the cooled crust. Spoon cooled strawberry sauce on top and swirl gently with a knife.
Bake
- Bake for 35-40 minutes until edges are set and center jiggles slightly. Do not overbake.
Chill & Slice
- Cool at room temperature for 30 minutes, then refrigerate for at least 3 hours or overnight. Slice into squares.
