  • 12 oz Andouille Sausage or kielbasa or chicken sausage
For the Rice
  • 1 cup Long-Grain White Rice can substitute with jasmine, basmati, or brown rice
For the Veggies
  • 1 cup Bell Peppers any color
  • 1 medium Onion yellow or white
  • 1 cup Celery
For Flavor
  • 3 cloves Garlic minced
  • 1 medium Jalapeño optional
  • 2 tablespoon Cajun Seasoning
For Cooking Liquid
  • 3 cups Chicken Broth
For Garnish
  • 2 tablespoon Parsley fresh, chopped

Method
 

Step-by-Step Instructions
  1. Brown the sausage in a skillet over medium heat for about 3-4 minutes on each side until browned. Remove and set aside.
  2. Sauté the diced onion, celery, and bell peppers in the same skillet for 5 minutes, then add garlic and Cajun seasoning for 1 minute.
  3. Toast the uncooked rice in the vegetable mixture for about 2 minutes.
  4. Add chicken broth and return the sausage to the skillet. Bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes.
  5. Let it sit covered for 5 minutes, then fluff with a fork and garnish with chopped parsley.
