- Wrap feta blocks in a clean dish towel and place a weight on top. Allow to drain for 45 minutes.
- Preheat your oven to 350°F (175°C) and lightly grease a baking sheet.
- Unroll phyllo dough, cut into 3-inch wide strips, and brush each with olive oil.
- Place a feta piece at one end of each phyllo strip, sprinkle with lemon zest and thyme, then roll tightly.
- Heat olive oil in a skillet and sear the wrapped bites for about 30 seconds on each side until golden brown.
