Step-by-Step Instructions
  1. Wrap feta blocks in a clean dish towel and place a weight on top. Allow to drain for 45 minutes.
  2. Preheat your oven to 350°F (175°C) and lightly grease a baking sheet.
  3. Unroll phyllo dough, cut into 3-inch wide strips, and brush each with olive oil.
  4. Place a feta piece at one end of each phyllo strip, sprinkle with lemon zest and thyme, then roll tightly.
  5. Heat olive oil in a skillet and sear the wrapped bites for about 30 seconds on each side until golden brown.
  6. Transfer the seared bites to the baking sheet and bake for 5-7 minutes until phyllo is crisp.
  7. Drizzle with honey, sprinkle with flaky sea salt, garnish with thyme, and serve immediately.
