  • 1 pound Chicken can use rotisserie or grilled chicken
  • 2 tablespoons Fajita Seasoning homemade blend optional
For the Tortilla Layers
  • 8 pieces Corn Tortillas or flour tortillas if gluten isn't a concern
For the Veggie Medley
  • 2 cups Bell Peppers any color
  • 1 medium Onion yellow or red
For the Cheesy Topping
  • 2 cups Cheese Pepper Jack, cheddar, or mozzarella

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, sauté about 1 pound of seasoned chicken with diced onions and bell peppers for 8-10 minutes.
  3. Layer a few corn tortillas on the bottom of a 9x13 inch baking dish.
  4. Spread half of the sautéed chicken and veggie mixture over the tortillas, then sprinkle cheese on top.
  5. Add another layer of tortillas, the remaining chicken and veggies, and then finish with another layer of cheese.
  6. Bake for 20-25 minutes until cheese is bubbly and golden brown.
  7. Let cool for 5-10 minutes, slice, and serve.
