  • 12 oz short pasta (rotini or penne)
For the Salad
  • 4 ears fresh sweet corn grilled
  • 1 cup cotija cheese crumbled
  • 1 medium red onion diced
  • 1 large bell pepper diced
  • ½ cup cilantro chopped
For the Dressing
  • 1 cup mayonnaise or vegan mayo
  • ½ cup sour cream or Greek yogurt optional
  • 2 tablespoon lime juice
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, about 8-10 minutes. Drain and rinse with cold water.
  2. Preheat the grill over medium-high heat. Grill the corn for about 10-15 minutes, turning until kernels are charred. Cool and slice the kernels off the cob.
  3. In a bowl, whisk mayonnaise, sour cream or yogurt, lime juice, garlic, chili powder, smoked paprika, salt, and pepper until smooth.
  4. In a mixing bowl, combine the pasta, corn, onion, bell pepper, cotija, and cilantro. Pour the dressing over and toss to coat.
  5. Cover and refrigerate for at least 30 minutes. Serve cold, garnished with extra cheese and lime wedges if desired.
