  • 4 large Baking Potatoes (russet or Yukon gold)
  • 3 tablespoons Olive Oil
For the Cheese
  • 200 grams Feta Cheese or goat cheese for variation
For Seasoning & Flavor
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Oregano
  • to taste Salt
  • to taste Black Pepper
  • 1 teaspoon Red Chilli Flakes omit if preferred milder
For the Aromatics
  • 1 head Garlic wrap in aluminum foil
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Honey
  • 1 cup Fresh Basil or parsley/mint if unavailable

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (390°F).
  2. Wash and peel the potatoes, then cut them into bite-sized cubes. Par-boil them in salted water for 6-8 minutes before draining.
  3. Toss the par-boiled potatoes with olive oil, thyme, oregano, salt, and black pepper in a mixing bowl.
  4. Wrap the head of garlic in aluminum foil and place it in the baking dish along with the seasoned potatoes.
  5. Roast the potatoes for 30-40 minutes until golden brown.
  6. Add crumbled feta and fresh lemon juice to the baking dish, then return to the oven for an additional 15 minutes.
  7. After roasting, squeeze the roasted garlic cloves into the potatoes and mix in remaining lemon juice and honey.
  8. Serve warm or at room temperature, garnished with fresh basil.
