Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper.
  2. In a medium saucepan, bring the apple cider to a gentle boil and reduce to approximately ½ cup.
  3. In a large mixing bowl, whisk together the reduced apple cider, melted coconut oil, vanilla extract, egg, honey or maple syrup, and apple butter.
  4. In another bowl, whisk together the all-purpose flour, baking soda, salt, and apple pie spice, then gently fold into the wet ingredients.
  5. Delicately fold in the sliced Honeycrisp apples into the batter.
  6. In a small bowl, combine the granulated sugar, ground cinnamon, and diced salted butter until crumbly.
  7. Pour the batter into your prepared baking pan and sprinkle the cinnamon sugar topping over it.
  8. Bake for about 30-40 minutes until the edges slightly pull away and a toothpick comes out with a few moist crumbs.
  9. Allow the cake to cool in the pan for about 10-15 minutes before slicing into squares.
