Preparation Steps
- Preheat your oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper.
- In a medium saucepan, bring the apple cider to a gentle boil and reduce to approximately ½ cup.
- In a large mixing bowl, whisk together the reduced apple cider, melted coconut oil, vanilla extract, egg, honey or maple syrup, and apple butter.
- In another bowl, whisk together the all-purpose flour, baking soda, salt, and apple pie spice, then gently fold into the wet ingredients.
- Delicately fold in the sliced Honeycrisp apples into the batter.
- In a small bowl, combine the granulated sugar, ground cinnamon, and diced salted butter until crumbly.
- Pour the batter into your prepared baking pan and sprinkle the cinnamon sugar topping over it.
- Bake for about 30-40 minutes until the edges slightly pull away and a toothpick comes out with a few moist crumbs.
- Allow the cake to cool in the pan for about 10-15 minutes before slicing into squares.
