- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine chopped pecans, brown sugar, corn syrup, melted butter, vanilla extract, and cinnamon. Stir until well coated.
- Unroll your crescent roll dough onto a flat surface and separate it into eight triangles.
- Place a spoonful of the pecan filling on the wide end of each triangle and roll from wide end to tip, pinching the edges securely.
- Beat an egg with a splash of water and brush it over the tops of each crescent.
